| Chef Corrado |
The man in the kitchen is Corrado Giliberto, known to his friends as Corrie. Previously the chef at Ailey, Corrie and Walter decided to team up and create their own culinary experience by purchasing Oca Nera, a restaurant that has been in Woodbridge for almost two decades.
Corrado's approach is one of passion, he loves food and loves to bring enjoyment to people through food. His training has been by doing, by working at his craft here and abroad, working with many great chefs and honing his craft.
In designing menus and his daily specials, the emphasis is on innovation and delight, bringing new approaches to the tried and true classics, like using banana leaf instead of parchment paper to prepare cartuccio. It is in the mixing of culinary influences, Italian with Asian for example, that Corrado finds the inspiration to bring you a meal like you have never had, and will not soon forget. Like using a veal chop to create Veal Parmesan or chocolate ravioli for dessert.
Corrado wants to please. He wants to know what you think of his creations. It is how he strives for perfection. And if you desire a dish that is not on the menu, ask. Eating is an experience and he wants to give you an experience to remember.
Corrado follows no rules save three - all ingredients must be fresh and of the highest quality, attention must be paid to even the smallest details and each dish must be consistent in quality and taste. Beyond that, it is imagination that rules the day.
